Belvedere Restaurant Warsaw: chef Adam Komar’s classic Polish menu

Belvedere is a Warsaw restaurant in the New Orangery of the Royal Łazienki Park that mostly serves Polish favorites… but there’s nothing ordinary about the way chef Adam Komar prepares them with touches that turn everyday classics into gourmet treats. One of the items is herring with sour cream seasoned with onion, apple and celery, served with baby potatoes and dill. The Polish hors dʹœuvre platter comes with herring & baked potato as well as beef tartar and venison pâté with cranberry sauce. Amongst time-honored Polish dishes is Zrazy, similar to a French roulade, but with sliced meat rolled around a cottage cheese filling and smothered with tomato confiture. No Warsaw restaurant menu is complete without pierogis, which at Belvedere are plump Polish dumplings, stuffed with sauerkraut, mushrooms, duck, spinach, mountain ash-berries and Oszczypek cheese – a savory smoked cheese made from salted sheep’s milk (traditionally from the Tatra Mountains). Typical to every Warsaw restaurant are Polish soups, and Belvedere serves the best including tangy Żurek made with soured rye flour, smoked pork sausage, ham and egg with a generous dollop of sour cream. There’s also a Polish favorite called chłodnik - a cold Lithuanian soup made with cucumbers, young beets, radishes, kefir (kefir grain fermented milk which originated in North Caucasus) and thick sour cream. Homemade Polish food recipes are included on Komar’s menu; simple things like wild mushroom soup with noodles & cream.

Of the traditional entrees that have helped place Belvedere on the map of Warsaw’s best restaurants is: roasted trout seasoned with chives, butter and salsify cream (salsify is an edible flower of the sunflower family). There are fowl dishes like capon (a large castrated cockerel which is an Eastern European gastronomic delicacy valued for being juicier, more tender and fattier than a regular rooster/chicken/hen) stuffed in traditional style and served with cucumber salad & baby potatoes, as well as roast duck seasoned with marjoram and served with cranberry sauce & apricot Tarte Tatin (a French apricot upside-down cake). The most unusual item on Belvedere’s menu isn’t extraordinary due to it’s basic ingredients but due to the origins of the recipe, which came from the head chef of King Stanisław August Poniatowski (the last King of the Polish-Lithuanian Commonwealth who ruled from 1764-1795). It’s a simple yet elegant Belvedere special: beef tenderloin with boletus. Boletus, also known as “borowiki”, are considered some of the finest mushrooms in the world; in Italy they’re called porcino. It’s obvious why Belvedere is on the list of Warsaw best restaurants!

Komar’s version serves up a foie gras trio - fried with almond foam, roasted with dark chocolate, and a terrine (coarsely chopped pâté) with caramelized apples. Other items on the signature menu include: shrimp, avocado and mango salad with lime sauce; grilled eggplant with spring vegetable ratatouille and tomato confiture; beef carpaccio with morel mushrooms; risotto with green asparagus and white truffle aroma; beef cheeks with Jus red wine reduction; as well as lamb dumplings with mint sauce & grilled watermelon.
